Stir Fry Asparagus and Mushrooms


Ingredients (serves 3-4):

  • 1 bunch asparagus
  • ½ pc. red bell pepper (sliced)
  • ½ pc. yellow bell pepper (sliced)
  • 20 pcs. ginkgo nuts
  • 75 g (2.6 oz) Nameko (or Beech) mushrooms
  • a few coconut slices (optional)

Seasonings:

  • Salt
  • Sesame oil

Instructions:

  • Blanch red and yellow bell pepper and coconut slices.
  • Heat oil in a pan, stir fry ginkgo nuts. Add asparagus and mushrooms and stir fry with salt until cooked.
  • Add red and yellow bell pepper together with coconut slices. Stir fry and drizzle with sesame oil before serving.
