Stir Fry Asparagus and Mushrooms
Ingredients (serves 3-4):
- 1 bunch asparagus
- ½ pc. red bell pepper (sliced)
- ½ pc. yellow bell pepper (sliced)
- 20 pcs. ginkgo nuts
- 75 g (2.6 oz) Nameko (or Beech) mushrooms
- a few coconut slices (optional)
Seasonings:
Instructions:
- Blanch red and yellow bell pepper and coconut slices.
- Heat oil in a pan, stir fry ginkgo nuts. Add asparagus and mushrooms and stir fry with salt until cooked.
- Add red and yellow bell pepper together with coconut slices. Stir fry and drizzle with sesame oil before serving.
